This is the next video in our series on the 2009 Sauvignon Blanc. Our last clip saw the wine coming toward the end of fermentation in the Fairview cellar’s tanks. Fermentation has been completed and the wine has been left on its lees since then. This tasting of all the different tanks of Sauvignon Blanc in the Fairview (and Spice Route) cellars was to have a look at the quality and style of the wines. This gives insight into the viticultural practices that worked best, the progress of the various vineyards as well as the best possible blend of the various tanks.

It was a really interesting tasting. As you can see in the clip, the wines are still hazy, as they are still on the lees and have not yet been filtered. Many would argue that the wines may well be at their ‘tastiest’ in this form!
